Cake Day With My First Own Recipe

I love to bake and I love to eat cake. Baking is something that relaxes me and gives another opportunity to be a little creative.
Since yesterday was National Cake Day I decided to use this opportunity to sort of create my very first own recipe. It is an autumn inspired gluten free cake with some yummy cinnamon frosting. So here we go:

What you need:
– Electric (Stand) Mixer
– Oven
– 8-inch cake pan (1 or 2) à I used a heart shaped cake pan

Ingredients
– 1½ cups gluten free flour (e.g. Schär Cake & Cookies or Pamela’s artisan blend)
– 1cup brown sugar (I used coconut sugar)
– 3 medium eggs
– ½ cup vegetable oil
– 2 tsp vanilla flavoring
– 1 tsp baking powder
– 1 tsp baking soda
– ½ cup ground almonds/Almond flour
– 2½ tsp ground cinnamon
– 2 ½ tsp gingerbread spice (= mix of approx. ½ tsp orange zest, ½ tsp ground nutmeg, ½ tsp ground cloves, ½ tsp allspice, ½ tsp ground star anise & for more spice add ground ginger)
– Pinch of salt
– ½ cup buttermilk
– 2 cups shredded carrots
– Butter (for greasing pan)

Frosting (depends on how much of a frosting fan you are)
I used:
– 10 oz cream cheese
– 1 ½ confectioner’s sugar
– 6 tbsp butter
– 2 tsp vanilla flavoring
– 2 tsp cinnamon

Decoration (optional)
– Crumbled gingerbread cookies

 

  1. Preheat oven to 350F. Grease and flour pan(s)
  2. Whisk dry ingredients: Flour, baking powder, baking soda, cinnamon, gingerbread spice, pinch of salt
  3. Mix wet ingredients: Eggs, sugar, vegetable oil, vanilla, almond flour
  4. Add half of dry ingredients to the wet mix, then buttermilk, then the other half
  5. Finally fold in shredded carrots
  6. Pour in half of the mix in one pan the other half in the second pan. If you only have one pan just bake one half after the other
  7. Bake for about 20 minutes until light golden brown (be careful to not over bake)
  8. While they cool out you can start to prepare the frosting. Mix everything together until its smooth and creamy.
  9. Once the cake layers are cooled, just spread frosting in between, on top and around.
  10. Decorate like you want to 🙂

Just be creative and free with the spices and the decoration. The amount of cinnamon and spiciness is totally up to you. Also if you rather like a usual frosting just leave out the cinnamon.
